I’ve had my first hot chocolate a few years ago in Vienna. I can still remember the rich, smooth and creamy texture, the hot and indulgent chocolate, tasting sweet and bitter and spicy with cinnamon, with layers of perfectly whipped vanilla cream on top, oozing around the mug – oh, what a joy!
Since then I had various experiences with hot chocolate, such as an absolutely exquisite hot chocolate served on a silver tray at Caffe Florian in Piazza San Marco in Venice, but also some not very remarcable ones in various Coffe Shops around the world. However, I don’t really like remembering not-very-happy hot chocolates, so let’s not even mention any names or places. So back on the happy side, if you ever get your way in Romania, you can find in Timisoara (my home town) the best spicy hot chocolate in town at “The Coffe Project” – a small, independent coffee shop located in the historic centre of the city. They do not only sell fabulous hot chocolate, but they are also passionate about coffe, so please try an espresso as well.

Also, along the time I’ve gone through various attempts on trying to replicate that rich, luxurious, creamy, chocolaty taste. And just when I thought that I have found the perfect combination of taste and creaminess with a mix of milk, dark chocolate and dark cocoa – I found myself one day with nothing but hot chocolate on my mind, but wit no trace of milk in the fridge, and too lazy to take myself out of the Sunday pijamas to go out and buy some. Then I found the coconut milk and thought I could give it a try. It was the most inspired decision: the coconut milk added to the creaminess, as well as having a mild and not too overpowering coconut flavour which worked perfectly well with the dark and bitter chocolate. What a rich, decadent hot chocolate I made on that Sunday morning! What a day! The day when the coconut milk has gained a top place on my shopping list! I shall always have a can or two (or three – hey, you never know when you might have some unexpected guests on Sundays morning, right?) in my cupboard! 🙂

So here it is, my accidentally discovered recipe for the most luxurious and completely decadent hot chocolate:

Coconut milk hot chocolate

Ingredients

  • 500 ml coconut milk
  • 120 grams dark chocolate broken into small pieces
  • 2 tablespoons dark cocoa powder
  • 2 tablespoons muscovado sugar
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon vanilla extract
  • 100 ml double cream - for serving
  • 100 grams marshmallows - for serving optional, non-vegetarian

Instructions

  • Put the coconut milk in a medium pan, add the chocolate, cocoa powder, sugar, cinnamon powder and vanilla extract. Place the pan on a medium heat and mix all the ingredients until the chocolate is starting to melt.
  • Bring the mixture almost to boil and turn off the heat.
  • Separately, whip the cream until it forms soft peaks.
  • For serving, pour the hot chocolate into mugs or glasses, add a generous amount of whipped cream and marshmallows.
  • Serve hot.

Note:

  • Please note that due to the gelatine content in marshmallows, this is not a veggie-friendly recipe.
