Halloumi kebabs with summer veggies

Ingredients

(serves 4):

  • 250 grams halloumi cheese
  • one courgette
  • 4 shallots
  • 10-12 cherry tomatoes
  • sea salt
  • black pepper
  • olive oil
  • lemon juice

Instructions

  • Cut the halloumi cheese and the vegetables into even cubes (except of the cherry tomatoes)
  • Add them onto the wodden or metallic skewers
  • Sprinkle some olive oil, a few drops of lemon juice, some sea salt (not too much, as the cheese is a bit salty) and fresly ground black pepper
  • Cook on the grill for 2-3 minutes on each side
  • Serve warm, with a glass of chilled white wine :)
