Orzo Salad with Crayfish and Green Peas
Summers are all about quick, easy dinners that require minimal cooking while boosting all the fresh flavours. And this salad ticks all the boxes. It’s easy to make, takes less than 15 minutes to prepare and it tasted delicious. I love orzo in summer pasta salads, as it is lighter than regular short pasta shapes. It is also easy to pair with vegetables, crustaceans and seafood.
Orzo Salad with Crayfish and Green Peas
Ingredients
- 100 g orzo pasta
- 100 g green peas
- 50 g crayfish cooked
- 1 bunch pea shoots
- 1 tsp olive oil
- 1/2 lemon juice
- Maldon salt
Instructions
- Boil the orzo pasta in salted water for 9 minutes (or according to cooking intructions printed on the package). Drain and set aside.
- Blanch the peas in salted water, drain and set aside.
- In a bowl, mix the orzo with blanched peas. Add the crayfish and season with olive oil and freshly squeezed lemon juice. Add salt if necessary.
- To serve, place the salad on individual plates and garnish with pea shoots.
